Mary Yavelak is the Food Policy and Innovation Manager at Compass Group USA, where she leads food safety efforts related to HACCP plans, variances, and SOPs for specialized processes. In her role on the corporate Food Safety and Quality Assurance team, she supports company-wide compliance by interpreting regulations and writing policy, while also evaluating new and emerging technologies for food safety and hygienic design. In her previous role, Mary coordinated NC State’s HACCP training course, training food regulators nationwide on identifying and reviewing special processes at retail. Mary is passionate about making complex food safety concepts accessible to both technical and non-technical audiences and fostering collaboration between industry, academia, and regulatory bodies.
