Tara Paster Cammarata is President of Cenza, Inc. a company dedicated to reaching, educating, and positively impacting the food and beverage industry by delivering training and consulting excellence to all.

As a Certified Professional in Food Safety (CP-FS), Certified Food Protection Manager (CFPM), and a Food Management Professional (FMP), Tara has helped food industry organizations and operations act smarter, quicker, and safer. She is one of the leading national speakers on food safety and responsible alcohol awareness. Over the past 20+ years, Tara has been leading and cultivating the hospitality industry and regulatory community with new innovative approaches to HACCP and Food Defense Training.

Recognized in 2022 in the Top 10 Inspiring Women Leaders; as well as, in 2024, 2023, 2022, 2021, 2020, 2019, 2018, and 2017 as one of the top global Hospitality Experts in the World by Global Gurus Research, Tara possesses unique expertise in the industry. Tara is the recipient of the 2024 AFDO President’s Award, the 2021 AFDO Industry Member Award, the AFDO Above and Beyond Award recipient in 2016 and 2017, and the 2014 Central Atlantic States Association Award for outstanding service.

Tara is an expert witness in food service, food safety, and alcohol-related court cases. She earned her Degree in Hotel, Restaurant, and Institutional Food Service Management and earned her credentials as a Train-the-Trainer Instructor for CP-FS, Environmental Sampling, and Evaluating Active Managerial Control (AMC) for Regulators, as well as a Master Trainer in HACCP. Tara is a Lead Trainer for FSPCA's Preventive Controls for Human Foods course and Foreign Supplier Verification Program course, the FDA recognized curriculums. She is the author of three SURE™ HACCP books and SURE™ Food Defense.
